The Cacciali Family is one of most authentic artisanal Culattello producer based in Zibello village in the heart of his PDO area. They cure his Culatello following old traditional recipe that was remain almost the same as more than 100 year ago. From raw material selection of certain superior caratteristic  type of strictly Italian local pork legs and special care for each single Culatello during all the long curing process until the last slow maturation in his underground cellar, opening (for few hours) and closing the special windows every early morning to let come inside the special humidity of the Po river valley microclima. The result is a sublime Gourmand excellence tasting product that is reserved only for real connoisseurs and Culatello lover.
