Soil type:Firm and contains clay, called “CARANTO”, comingfrom the decomposition of sedimentary rock, chalkyand rich in magne sium.

Training system:Guyot and Sylvoz, trained low.Grape production: 110 quintals/ha

Vintage:harvested by hand into crates at the beginning of September.

Vinification:Hand picked into crates generally mid to late Sep-tember, first the pinot noir and then the malbec.Immediately after the grapes reach the cellar theyare de - stemmed and pressed. Afterwards 10 - 15days mace r ation in large wood barrels with daily“delestage”. After separating the must, the wineremains in barrels for approx. 2 months for mal o-lactic fermentation. As soon as this procedure hasended, part of the wine goes into a steel tankwhile the remaining part matures for approx. 8months in oak barrels (2nd filling). After blending,the wine is bottled where it co ntinues to age.

Maturation and aging:fine lees contact for a few months, avoiding malolactic fermentation. Aged further in the bottle before sale.

Organoleptic characteristics:Robust red full aroma with notes of small red fruits of the forest (raspberries, blackberries). Dry, rich structure, spicy and fruity. Excellently matched to grilled meats, sausages,roasts, rabbit meat.

Suggested pairings:may be served as an aperitif, but also interesting with fine rice dishes, fish stews and poultry.

How to serve:at a temperature of 12 - 16 °C iin wide, long- stemmed glasses
