Sottocastello Bianco DOC

ALCOHOL CONTENT:14% volume GRAPE VARIETIES USED:Tocai 80% - Chardonnay 20%. PRODUCTION AREA AND EXPOSURE:municipality of Prepotto on the border withSlovenia. All the vines are located on a hill with terrace cultivation, facing east. SOIL TYPE: marly with balanced amount of clay and rich in skeleton (flish). TRAINING SYSTEM: Sylvoz short cane, grape yield 0.8 kg. per plant. VINTAGE:harvested by hand into crates in late September, when the grapes are fully ripe. VINIFICATION:immediatelyafter harvesting the grapes are crushed, cooled and pushed into tanks for maceration on the skins under inert gas. This is followed by soft pressing and cold settling of the must. The clarified part is then transferred into barrels for alcohol fermentation, after which the malolactic fermentation process begins. MATURATION AND AGEING:after the two fermentation processes, the barrels are topped up and buttoned up daily until March. After this period of ageing in the barrel the wine is filtered and botled where it ages for a further six months. ORGANOLEPTIC CHARACTERISTICS:extremely classy wine with complex aromas reminiscent of ripe fruit, wild flowers, oriental spices, which blend well with the oak woodtoasting. Surprisingly firm well-rounded structure, plush on the palate. This meditation wine is also a fine accompaniment to elaborate roasted fish dishes and smoked foods. HOW TO SERVE: at a temperature of 12-14° C in large, good-quality white wine glasses.
