TRAINING SYSTEM: Guyot

SOIL TYPE: marly with balanced amount of clay and rich in skeleton (flish).

VINTAGE:harvested by hand into crates at the end of September.

VINIFICATION:classic red wine vinification, with maceration for 20 days with daily délestage.

MATURATION AND AGEING: for 14 months in new French oak barrels, 50% in 225 litr barrels and50% in 112 litre barrels. Aged for a further 12 months in the bottle.

ORGANOLEPTIC CHARACTERISTICS: Gorgeous deep red colour. Rich fragrance reminiscent of raspberry and blackberry. The hints of coffee and chocolate emerge further with ageing. Well-balanced body, with mellow, polished tannins.

SUGGESTED PAIRINGS: Its balanced flavour makes it ideal with game, roast suckling pig, meat on the skewer and mature cheeses.

HOW TO SERVE: at a temperature of 16 -18° Cin large glasses.
