Levoni Capocollo is made from neck muscles, which are salted, flavoured with spices, such as chilli pepper and paprika, then accurately massaged. Enveloped in natural casing, it is then tied by hand using a thick twine and pressed between two bamboo sticks. Its texture is tender, its flavour is tasty and spicy with a light natural smoking.
