Ribolla Gialla DOC

One of the native vines of Friuli with the most ancient historical references, it is widespread in Colli di Rosazzo, thanks to the high quality wine it produces. Known for its fine, delicate perfume, this wine boasts a good level of natural acidity that makes it fresh and elegant.

Grapes: Ribolla Gialla 100% Origin: Oleis di Manzano, company-owned grapes Terrain Type: Marly and eocenic Altitude: 120 – 150 m above sea level Cultivation method: Guyot Vineyard density: 4.500 vines per hectare Grape yield: circa 7.0 tons per hectare

Winemaking: The de-stemmed grapes undergo a soft squeezing process. Alco- holic fermentation occurs in steel containers maintained at con- trolled temperatures. Once fermentations are finished, the wine rests in yeasts for at least 4 months before bottling.

The Wine: This straw-colored wine boasts a mid-range level of intensity. Its clean floral scents suggest melon and a light hint of citrus. To the palate, it’s clear-cut, very fresh and flavorful, coherently character- ized by the citrus scents perceived by the nose.

Combinations: It makes an excellent aperitif and proves a great match for salty sandwiches and starters in general. It’s also ideal for accompany- ing delicate first courses such as trofie pasta with pesto sauce and risotto with herbs.
