It has its origins in the warm Calabrian lands. The mix is made up of lean meats minced to quite a large-sized grain. The flavour is very spicy due to the chili pepper and strong paprika. The salami undergoes a gentle smoking. An ideal ingredient for pizza toppings. It has a typical, flat “U” shape.
