Ca’Barone – Cabernet Sauvignon IGT

Grapes: 95% Cabernet Sauvignon, 5% Merlot

Alcohol:14 % vol

Production area:Vineyards in the Veneto region with a limestone and clay soil which gives good depth of colour and a solid tannic structure to the wine. The grapes are trained using the cordon spur method.

Method of production:The grapes are hand-picked and placed in plastic boxes, then stored under temperature and humidity controlled conditions for 15-20 days in order to dry the grapes slightly, thus concentrating the sugar levels and enhancing the perfume. In November, fermentation takes place in temperature-controlled stainless steelvats. After a fermentation and maceration of 20-25 days, during which the wine is repeatedly pumped over to extract colour and fruit tannins, the wine is then fined in stainless steel.

Tasting notes:

Aspect: Deep garnet in colour with purple reflections.

Nose: The nose is of intense blackcurrant jammy fruit with notes of raspberry and plum.

Palate: On the palate the wine isfull-bodied and shows ripe, concentrated berry fruit with soft fruit tannins and awell-rounded and harmonious structure, which holds well the relatively high level of alcohol.
