Type of wine: Recioto della Valpolicella

Denomination: D.O.C.

Grapes : 70% Corvina, 25% Rondinella, 5% Molinara

Alcohol: 13,5% vol

Production area: Production Area: South-facing, hilly vineyards sites from the East of the Valpolicella area in the Veneto region. The soil is thin, dark clay, which is rich in iron, over calcareous rocky terrain. Vineyards are cultivated on terraces using the Pergola Veronese or Guyot systems.

Method of production:

Vinification: The grapes are hand-picked at the end of September and left to dry under carefully controlled conditions for 4 months to concentrate the juice, losing around 30 - 40 % of their weight. Maceration on the skins is for around 12 days. Fermentation takes place in temperature controlled stainless-steel and is blocked by refrigeration before all the grape sugars have been converted into alcohol, resulting in a sweet wine. Fining then takes place in oak barriques for up to 18 months.

Tasting notes:

Aspect: Deep garnet-red

Nose: Intense aroma of black-cherry jam and notes of liquorice and cinnamon.

Palate: Sweet andfull-bodied on the palate withblack-cherry fruit balanced by a clean acidity and soft fruit tannins. Best consumed at the end of a meal, by itself or with desserts or strong flavoured cheeses.
