Tenuta Sant' Anna

Sauvignon DOC

DESCRIPTION

A grape-variety originating from the region of Bordeaux, this vine is cultivated with excellent results also in Italy, especially in the north-east. In the clayey terrain of the eastern part of the Veneto region it has found a particularly propitious habitat due to the differences in temperature between night and day that maintain its extraordinary wealth of aromas intact.

VINIFICATION

The grapes are harvested at night or at the first light of dawn when the cool temperatures help preserve the principal aromas of the fruit. After being subjected to cold-soaking, the grapes are gently pressed and the must obtained are transferred to steel vats for the process of alcoholic fermentation. Subsequently the wine is left “on the yeasts” for about three months before being bottled.

WINE

Straw-yellow color with green tints. The bouquet is generous and pronounced with aromas of wild flowers, ripe melon and peppers. On the palate the flavor is sapid and slightly acidulous, delicate with faint traces of pepper.

MATCHES

This wine is ideal as an aperitif, or as an accompaniment to mild-flavored soups and risottos. Also excellent with fish dishes. It should be served cool, at temperatures of 10-12°C.
